At the helm is Mathilde Boulachin, who was born in Champagne and subsequently went on to study the business of wine, travel extensively and work in wine buying and brand management before setting up her own company. In the winery Made from a selection of Sauvignon Blanc wines that are chosen for the intensity of aromas and freshness. This blend is then gently de-alcoholised through a vacuum distillation process with temperatures never going above 35 degrees to ensure the freshness and aromas of the wine are preserved.
